- 200 gr of desalted and flaked cod, previously
- 175 gr of wheat flour
- 100 gr of breadcrumbs
- 2 eggs beaten
- Chopped cilantro or parsley
- 2 potatoes
- Chopped garlic
- 1 chopped onion
- Oil for frying
- Salt (if necessary)
- Pepper (optional)
- Tips: if you wish instead of frying the croquettes in oil you can fry them in the air fryer
The cod croquettes can be accompanied both with salad and lemon, as we did, as well as with a tomato sauce. Follow our homemade recipe, step by step.
1- The first is to desalinate the cod by soaking it the night before, for approximately 10 hours, changing the water 3 times. Then, remove it from the water, dry it and crumble it. Reserve.
2- Wash and peel the potatoes and bring them to the fire to cook in plenty of water until they are soft.
3- The next step is to pass the potatoes through a food processor, and reserve.
4- Bring a frying pan to the fire with a little oil. Add the chopped onion and garlic. Then add the cod and sauté. Add chopped parsley or cilantro, correct the salt (if necessary), and let it brown and cool.
5- In a bowl, mix the mashed potatoes and cod. Mix everything very well.
6- The time has come to form the croquettes.
7- Pass each croquette through the wheat flour, then through the beaten eggs, and coat them in the breadcrumbs.
8- Fry the croquettes in plenty of hot oil until golden brown.
9- Remove the croquettes from the oil and arrange them on an absorbent paper.
10- Serve the croquettes accompanied by a salad or tomato sauce, and lemon.
