Most of Christmas recipes have to do with their sweets. Among them, of course, is the polvorón. It is one of the favorite Christmas sweets for children. Its dough includes flour and lard. If you add almonds, be especially careful with the little ones.

We suggest you follow this recipe for polvorones from a great Spanish bakery, Eva Arguiñano. This is a very simple recipe that gives fantastic results.

  • 400 gr of flour
  • 225 g of lard
  • 150 g of icing sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons of anise
  • Zest of 1 lemon
  • A little more flour and icing sugar for dusting

Tip: If you want, you can add almond. It's optional.

1. Pour the flour on the baking sheet and spread it well. Put the tray with the flour at 150ºC for approximately 6 minutes. The objective is toast the flour a little. Remove the tray after 6 minutes, stir the flour well and put it in the oven for another 6 minutes.

2. Once the toasted flour is removed from the oven, sift it over a bowl. Add the cinnamon, sugar, butter, anise and a little lemon zest. Knead all the ingredients well. If you decide to add almond, don't forget to add it now.

3. Sprinkle a work area (table or counter) with flour, and the dough as well. Roll it out with a rolling pin until you get a 1.5 cm thick sheet.

4. Use a cookie cutter or circular cookie cutter and see cutting circles from your dough. Put them on a tray lined with parchment paper.

5. Put the polvorones in the oven for 15 minutes at 170ºC. Then, when you take them out, let them cool. Then sprinkle with icing sugar. And ready!
