After the excesses of some parties, it is convenient to prepare some light and healthy dishes, such as this Caesar salad with chicken. A simple and low-calorie recipe for children and pregnant women, ideal as a starter for any occasion.
This original salad was created, by a chef named Livo Santini, who named the dish in honor of the owner of the restaurant where he worked. The Caesar sauce is very popular and it is prepared quickly, you will see how your children love it.
- ½ lettuce
- 250 gr. of chicken
- 50 gr. bread croutons
- Grated Parmesan cheese
- 2 egg yolks
- 125 ml. Of olive oil
- 4 salted anchovy fillets
- 1 lemon
- 1 clove garlic
- ½ teaspoon mustard
1. First, we will prepare the sauce. To do this, put the egg yolks, two teaspoons of lemon juice, the garlic clove, the oil, the mustard and the anchovies in the blender glass. Begin to beat by keeping the mixer at the bottom of the glass until the sauce has the texture of mayonnaise, and then moving it from top to bottom, so that it is well emulsified.
Reserve the sauce.
2. Heat a little oil in the pan over medium heat. Dice the chicken, add it to the pan and fry for a few minutes, until golden brown. Take out and drain.
3. In the same frying pan, add a little more oil and fry the croutons so that they are toasted. Drain on a plate lined with kitchen paper
4. Wash the lettuce and chop it, drain it and put it in a bowl. Pour the bread and chicken into it and sprinkle with the sauce. Sprinkle grated Parmesan cheese on top.
